So racking up at an impressive No2 on the World's Hottest Chilli list is the Trinidad Moruga Scorpion, packed with lots of heat it's always an amazing chilli bursting with fruit.
So the challenge was to take that heat but find a natural flavour that blended with the Chilli.
We found it right on our doorstep with Hampshire Honey. The sauce is fermented longer than most at 6 weeks, with garlic, onion, lemons & limes. Then it's all brewed with cider vinegar and the amazing honey from North Hamphire.....
